Ingredients
- 2 1/3 c. sugar
- 2/3 c. light corn syrup
- 1/2 c. water
- 1/4 tsp. salt
- 2 egg whites
- 1/2 tsp. vanilla extract
Preparation
Step 1
Combine sugar, corn syrup, water, and salt. Cook slowly, stirring constantly, until mixture boils. Cook slowly, without stirring, to 265º F (or when small quantity dropped into cold water forms a very hard ball), washing away crystals which form on the sides of the pan with a moist cloth wrapped around the tines of a fork. Beat the egg whites stiff. Gradually pour the hot syrup on the egg whites, beating constantly, until the mixture holds shape. Add vanilla extract. Pour into a greased 8 x 8 x 2” pan. Cut in squares.
NOTE: Like Dad when he made fudge, Mother always poured the divinity onto a waxed paper lined cookie sheet instead of using a greased pan.
