Curried Lentils

Ingredients

  • 1 tbsp olive oil
  • 1 onion, peeled and chopped
  • 1 red pepper, coarsely chopped
  • 2 cloves garlic, chopped
  • 1 tbsp curry powder
  • 1 tsp sea salt
  • 1 cup lentils (I use red)
  • 1 cup green beans, cut into 2 inch pieces or edamane
  • 1 cup chopped fresh tomatoes
  • 1 tbsp tomato paste
  • 1 cup chicken stock
  • spinach to serve it over

Preparation

Step 1

Cook onions in oil over medium-high heat until soft. Add peppers and garlic and cook until peppers are tender. Add curry and salt and heat until fragrant. Add the lentils and rest of ingredients except spinach and cook for about 20 minutes until lentils are cooked.

Serve hot over spinach.
