Freezer Jam

This is an old recipe we used in our summer children's programs.


Berries work best, then stone fruits

Ingredients

  • 1 Tbsp lemon juice
  • 3 cups prepared mashed fruit at room temperature
  • 1/2 cup cold water
  • 3 Tbsp + 1 1/2 tsp agar flakes
  • 1/2 cups mild honey
  • Jars for jam

Preparation

Step 1

Stir lemon juice into fruit and set aside. Place water in a small saucepan and stir in agar flakesDo not stir any further.

Wait one minute, then bring agar to simmer over medium low heat. Once mixture is simmering, stir for at least two minutes or until agar is completely dissolved

Stir in honey. Scrape side and bottom of pan with rubber spatula. Pour with one hand and stir agar mixture into fruit.

Do not add fruit to agar.

Continue stirring until all ingredients are completely mixed. Taste, add more honey if desired. Pour into jars and refrigerate up to three weeks.

Otherwise, freeze. Can keep in freezer for 9-12 months.
