Take-Along Cheesecakes - Chris Abell

Ingredients

  • 1 pkg (8oz) cream cheese, softened
  • 1/3 cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 12 vanilla wafers
  • Fresh fruit

Preparation

Step 1

Beat cream cheese until light and fluffy. Gradually beat in sugar. Add egg and beat well. Mix in extracts. Arrange paper liners in 12 muffin cups. Place a wafer in bottom of each cup. Evenly divide cheese mixture among muffin cups. Bake at 350 for 25-30 minutes. Cool and chill overnight. Top with fresh fruit when ready to serve.
