Citrus-poached Haddock

Ingredients
- 1 small onion, finely chopped
- 1 1 clove garlic, minced
- 1/4 cup orange juice
- 1/4 cup dry white wine
- 1 tsp. lemon zest
- 1 tbsp. fresh lemon juice
- 1/4 cup low-fat, low-sodium chicken broth
- 1 lb. haddocl fillet, cut into 4 pieces
- 2 tbsp. chopped fresh parsley or dill
- 1/4 tsp. each salt and pepper

Step 1
In pan, bring onion, garlic, orange juice, wine, zest and lemon juice to boil. Boil until liquid is reduced by half, about 5 mins. Add stock and return to boil. Place haddock in pan; reduce heat and simmer gently, covered, for 10 mins., or until fish flakes with fork. Remove haddock. Bring liquid to boil and reduce by 1/3. Stir in parsley and season. Pour sauce over fish.
