LEMON CHICKEN

Ingredients

  • 4 boneless, skinless chicken breast halves
  • 1/3 c. flour
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 1 Tbs. olive oil
  • 2 lemons, juiced
  • 1/2 c. white wine or chicken stock

Preparation

Step 1

Slice chicken breasts into 1" thick strips. Mix together flour, salt and pepper. Dredge chicken in flour mixture. Heat a large skillet over medium-high heat. When hot, add oil and swirl to coat. Add chicken pieces and sear until golden brown, 2-3 minutes per side. Remove chicken and set aside. Add lemon juice and wine or stock and stir to scrape any brown bits from the pan. Bring to a boil; reduce heat to medium-low and allow mixture to simmer until reduced by half, about 4 minutes. Add chicken pieces, cover, and finish cooking, turning halfway through, for 8 more minutes.
