Watercress Egg Drop Soup

Ingredients

  • 6 cups chicken broth
  • Lightly crushed garlic clove
  • Green onions
  • Pepper
  • 2 Eggs
  • 1-2 bunches watercress

Preparation

Step 1

Bring the chicken broth to boil in large, covered pot. Add the garlic and onion (including greens) and cook gently about ten minutes.

Boil up and pour in the beaten eggs. Keep at a rapid boil, stirring until the eggs shreds. Then add the watercress and cook only about a minute longer.
