Pumpkin Bar *

Ingredients

  • 4 eggs
  • 1 2/3 cup sugar
  • 1 c vegetable oil
  • 1 (16 oz) can of pumpkin
  • 2 c flour
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 (3oz) pkg cream cheese
  • 1/2 c margarine (softened)
  • 1 tsp vanilla
  • 2 c powdered sugar

Preparation

Step 1

1. Preheat oven to 350 degrees.

2. Combine eggs, sugar, oil and pumpkin in a bowl and beat well until blended.

3. In another bowl stir together the flour, baking powder, cinnamon, baking soda and salt.

4. Put the batter in an ungreased 15x10x1 cookie sheet or 9x13 baking dish.

5. If using a cookie sheet bake for 25-30 minutes. If using a 9x13 baking dish bake for 30 minutes then check every 5 minutes.

6. ICING: Beat cream cheese, margarine, vanilla and powdered sugar until smooth.

7. Ice the pumpkin bar once it has cooled.
