Pepper Steak - Martha Cooper

Ingredients

  • 3 cups hot cooked rice
  • 1 lb lean beef round steak
  • 2 cloves of garlic crushed or minced
  • 1½ c beef broth
  • 1 cup sliced green onions
  • 2 green bell peppers cut into strips
  • 1 red bell pepper cut into strips
  • 2 T. cornstarch
  • ¼ cup soy sauce
  • ¼ cup water
  • 2 large tomatoes cut in eighths
  • Paprika

Preparation

Step 1

Cut meat in ¼ inch wide strips. Sprinkle generously with paprika and allow to stand while preparing other ingredients. Brown meat in butter. Add broth and garlic. Cover and simmer 30 minutes. Stir in onions and peppers. Cover and cook 5 minutes more. Blend cornstarch, water and soy sauce. Stir into meat. Cook stirring until clear and thickened…about two minutes. Add tomatoes and stir gently. Serve over rice.
