Walnut Pear Crumble

Most of the fat in this low-glycemic recipe is a "healthy omega fat," derived from walnuts.

Ingredients

  • Crust:
  • 1/2 cup walnuts, chopped
  • 1/2 cup oat bran
  • 1/2 cup soy baking mix (GNC brand or others)
  • 1/2 tsp allspice
  • 1/2 tsp cinnamon
  • 1/3 cup butter, softened
  • 2 tsp Splenda (or 1 1/2 tsp agave nectar)
  • Filling:
  • 1/2 cup Splenda
  • 1/2 cup oat bran
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 cup chopped walnuts
  • 7 cups pears, cored and sliced (about 6 large or 8 medium)
  • 2 tbsp lemon juice
  • 3 tbsp melted butter
  • 2 tbsp agave (or 2 tbsp and 2 tsp Splenda)

Preparation

Step 1

Preheat oven to 400 F. Lightly grease the inside of an 8-inch square baking dish.

Crust: Place all ingredients in the bowl of a food processor, using the sharp blade. Process until the nuts are finely chopped. Remove about 1/2 cup of the mixture. Add Splenda or agave to this and mix with fork. Set aside.

To the mixture remaining in the processor, add 2 tbsp of cold water. Quickly process, just until blended. Press the mixture into the bottom and up the sides of the baking dish.

Filling: In a large bowl, combine Splenda, 1/4 cup oat bran, cinnamon, nutmeg and walnuts. Mix together. Add sliced pears and toss gently to thoroughly coat the pears. Spoon into the prepared baking dish.

In a small bowl, combine the lemon juice, melted butter, agave and the remaining 1/4 cup oat bran. Pour over the pear mixture. Crumble the reserved crust mixture over the top. Place in the oven. Reduce the oven temperature to 350 F. Bake 55 minutes. Best when served warm.
