Ingredients

  • 3

    large eggs

  • 1

    cup vegetable oil

  • 2 1/2

    cups sugar

  • 2

    teaspoons vanilla

  • 2

    cups grated zucchini, well drained

  • 3

    cups all-purpose flour

  • 1

    teaspoon baking soda

  • 1

    teaspoon salt

  • 1/4

    teaspoon baking powder

  • 2

    teaspoons ground cinnamon

  • Chopped nuts, raisins or chocolate chips (optional)

Directions

Preheat oven to 350 degrees. Grease and flour two 9-5 loaf pans. Set aside. In a large bowl beat eggs, oil, sugar and vanilla. Fold in the zucchini. Let stand 1 minute. In a medium bowl combine flour, baking soda, salt, baking powder and cinnamon. Add to the zucchini mixture. Fold in nuts, raisins or chocolate chips, if desired. Spoon the mixture evenly into the prepared loaf pans. Bake 50-60 minutes, or until a wooden pick inserted in the center comes out clean.
