When you need to serve eggs to several people atonce, bake the eggs in cups formed of refrigerator biscuits.

Ingredients

  • 1 pkg refrigerator rolls (10-12)
  • 10-12 eggs
  • herbs optional
  • Cheddar cheese, optional

Preparation

Step 1

Preheat oven to 400 degrees.

Grease 10-12 muffin cups generously with butter or margarine.

On a floured board or countertopk, roll each biscuit to a 4 inch round. Please each in a muffin cup, fitting dough into bottom and sides of the cup.

Break 10-12 eggs, one at a time into a small dish and slide one into each of the biscuit lined cups. Add salt and pepper to taste.

Bake eggs in a hot oven for 15-20 minutes or until eggs are done to choice.

Optional: add a dash of herbs, such as thyme, rosemary or chervil.

May also sprinkle small amount of cheddar cheese over eggs. Return to oven briefly til cheese melts.
