Ingredients

  • 4 tbl olive oil
  • 1 tsp worchestershire
  • lg chunk chopped pancetta
  • 1 med onion
  • 1/2 lb ground beef
  • 4 lg cloves garlic
  • 2 chopped celery stalks
  • 1 lg shredded carrot
  • 1 can red kidney beans drained
  • 1 can cannellini beans drained (white beans)
  • 2 cans diced tomatoes
  • 1 cup beef stock
  • 1/2 box ditali pasta tubes
  • 1 cup chopped zucchini
  • 1/4 cup chopped fresh parsley
  • 2 tsp oreggano
  • 2 tsp basil
  • 1 tbl vinegar (red, white or wine)

Preparation

Step 1

Cook chopped pancetta or bacon (can remove pancetta later if wanted)
Add ground beef and brown
Add all veggies except zucchini
Add salt and pepper to taste
Add garlic

Add beans and tomatoes
Add beef stock

Add parlsey, oregano, and basil

Add tomato juice or more beef stock as needed

Cook ditali tube noodle separately to al dente and drain and set aside

When soup is ready add vinegar and/or worchestershire, noodles, and zucchini and cook 15 more mins

Serve immediately with drizzle of olive oil and lots of parmesan to taste
