Ingredients
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1 1/2 cups water
- 3 egg yolks
- 1/3 cup lemon juice
- zest of 1 lemon
- 2 cups whipped cream
- 2 cups strawberries
Preparation
Step 1
Combine sugar and cornstarch in pan. Add water and stir over medium heat until boiling. Boil 3 minutes, stirring occasionally. Separate eggs into a bowl. Stir 1/2 of heated mixture into yolks. Return egg mixture to pan and cook for 1 minute (until reaches 160).
Stir in lemon juice and zest. Cool to room temp. Fold in whipped cream. Layer lemon mixture and strawberries in parfait glasses.
