Ingredients

  • 1 cup pumpkin puree
  • 1 egg
  • 1 1/2 cups milk
  • 2 tbs white vinegar
  • 2 tbs canola oil
  • 2 cups flour
  • 1/4 c brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp allspice
  • 1/2 tsp salt

Preparation

Step 1

Combine pumpkin, egg, milk, vinegar, oil
Combine the remaining dry ingredients
Add to the pumpkin mixture
Stir just till combined - don't overmix - a few small lumps are OK.

Heat a buttered griddle over medium low heat

Cook pancakes until light golden on both sides
