Ingredients
- Zest of 2 lemons
- 10 onces fresh lemon juice
- 1 lb. sugar
- 6 egg yolks
- 6 eggs
- 8 oz butter
Preparation
Step 1
Place the sugr in a bowl and rub together with the grated lemon.
Place the lemon juice, eggs, yols, and sugr together and place over a simmering water bath. Whis mixture constantly until very thic, about 15 minutes, the mixture should reach 160 degrees. Strain into a clean bowl. Stir slowly and allow mixture to cool to 110 degrees. Slowly whisk in the softened butter. Chill until needed.
Can be lighetened with whipped cream.
