BROWNED-BUTTER MASHED POTATOES

  • 1 1/2 lb. of red potatoes cut into 1-inch pieces
  • 6 tbsp unsalted butter
  • 1/2 cup of the cooking water
  • 3/4 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • Chopped fresh chives

Preparation

Step 1

Boil 1 1/2 lb. of red potatoes cut into 1-inch pieces in a pot of well-salted water until tender, about 20 minutes. Meanwhile, in a 10-inch skillet, heat 6 Tbs. unsalted butter over medium heat until the milk solids are browned, about 5 minutes. Reserve 1/2 cup of the cooking water, and drain.

Coarsely mash the potatoes in the skillet with the browned butter, moistening with a little cooking water if necessary. Stir in 3/4 tsp. kosher salt and 1/2 tsp. freshly ground black pepper and serve topped with chopped fresh chives.
