Ingredients

  • 1/4 cup canola oil
  • 1 1/2 sticks unsalted butter,
  • at room temperature
  • 2/3 cup smooth peanut butter
  • (chunky also works)
  • 1/3 cup powdered sugar
  • 1 cup light brown sugar
  • 1 egg
  • 1 egg yolk
  • 2 teaspoons vanilla
  • 2 1/2 cups all-purpose flour
  • 1 1/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 bag Reese’s peanut butter chips

Preparation

Step 1

Cream oil, butter, peanut butter, powdered sugar, and brown sugar until light and fluffy. Add the egg, egg yolk, and vanilla; mix until well blended. In a medium bowl, sift the flour, baking powder, baking soda, and salt. Add to the peanut butter mixture and mix on low speed until the flour is incorporated. Stir in the peanut butter chips by hand. Chill dough. Preheat oven to 350 degrees. Line baking sheets with parchment paper. Scoop by rounded tablespoon onto baking sheets about 2" apart. Use a fork to flatten the cookie by pressing a crisscross pattern on top. Bake 10-12 minutes or until golden brown. Cool on pan for 3 minutes. Transfer cookies to wire rack to cool completely.
