Ingredients
- 4 tsp. margarine
- 4 eggs
- 8 slices bacon, micro-waved
- OR pre-cooked sausage rounds
- 4 slices cheese
- 4 english muffins
Preparation
Step 1
Place 1 tsp. margarine in four 6 oz. custard cups. Microwave at 100% (High) 40 to 60 seconds, or until melted. Place 1 egg in each cup; scramble with fork. Arrange cups in circle in oven. Microwave on High 30 to 60 seconds, or until set but slightly moist, stirring eggs and re-arranging cups once. Let stand 2 minutes.
Layer 1 slice cheese, 1 scrambled egg and 2 bacon slices (or sausage round) between each split muffin.
Wrap each sandwich in paper towel.
Place in circle in oven. Microwave at Medium 2 to 2 1/2 minutes, re-arranging once.
