Ham and Cheese Frittata

Ingredients

  • 8 eggs
  • ¼ cup milk
  • 2 tbs. grated cheese
  • Salt and pepper
  • 8 sprigs oregano
  • 2 tbs. olive oil
  • 5 oz. thinly sliced smoked ham
  • ½ lb. mozzarella cheese

Preparation

Step 1

Beat the eggs with milk, cheese, salt, pepper, and half the oregano. Grease an 8 inch skillet with ½ the oil and set over medium high heat. Pour a little less than ½ the egg mixture into the skillet, and cook until the eggs are set on the surface. Top with ½ the ham and ½ the mozzarella and a few oregano leaves.

Ladle 1 cup of the egg mix over the top and finish cooking the frittata under the broiler for 2 – 3 minutes until the top is set. Prepare a 2nd frittata with the remaining ingredients.
