Ingredients
- 1 c. old-fashioned oat flakes
- 2 eggs
- 1/2 c. boiling water
- 3 tbsp. vegetable oil
- 2 c. flour
- 1 c. milk
- 4 tsp. baking powder
- 1/2 tsp. salt
- 1/4 c. Parmesan cheese
- 1 c. grated cheddar cheese
- 1/2 c. finely chopped ham
- 3 tbsp. green onions
- 1/2 tsp. sweet basil
Preparation
Step 1
Combine: oat flakes and boiling water - let stand.
Combine: flour, baking powder, salt, Parmesan cheese, grated cheddar, chopped ham, green onions, and sweet basil.
Beat eggs, vegetable oil and milk, stir well. Stir in oat flakes mix.
Add liquid to dry ingredients. Stir until just blended.
Spoon into greased muffin tins.
Bake in 400 degree oven for 20 to 25 minutes.
Reheat in the morning for a quick breakfast.
