Ingredients

  • 1 c. raisins
  • 1 c. diced mixed fruit
  • 1 1/2 c. firmly packed brown sugar
  • 1 c. strong black tea
  • 1/4 c. rum or brandy
  • 1 egg
  • 2 tbsp. vegetable oil
  • 1 3/4 c. flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 tsp. nutmeg

Step 1

In large bowl, combine raisins, fruit, brown sugar and tea. Stir in rum or brandy. Cover and let stand for 10 hours or overnight at room temperature. Lightly grease a 9 x 5" loaf pan and line bottom with wax paper. Beat egg and oil into fruit-tea mix.
combine flour with baking powder, cinnamon, salt and nutmeg and stir into fruit mixture, just until blended. Do not overbeat. Pour into prepared pan and bake in 325 degree oven for 1 1/2 hours or until toothpick comes out clean. Let cool for 10 minutes before turning out on rack to cool completely.

NOTE:
I also make this in mini loaf pans.
