Ingredients

  • Cake:
  • 2 1/4 cup flour
  • 1 1/2 cup sugar
  • 1 tbl + 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 cup butter, cut in small pieces
  • 1 tsp lemon zest
  • 1 tsp vanilla
  • 2 tbl lemon juice
  • 1 cup milk
  • 4 large egg whites
  • Lemon Filling:
  • 1/2 cup sugar
  • 2 tbl cornstarch
  • 1/8 tsp salt
  • 1/2 cup water
  • 1 large egg yolk
  • 1/4 cup lemon juice
  • 1 tbl butter
  • 1 tsp lemon zest
  • Frosting:
  • 3 large egg whites
  • 3/4 cup sugar
  • 3 tbl water
  • 1/2 tsp cream of tartar
  • 1/2 tsp vanilla
  • 1/4 tsp almond
  • 3/4 cup coconut

Preparation

Step 1

Cake:

Preheat oven to 350. Beat flour sugar, baking powder and salt. Add butter, zest, vanilla, lemon juice and 3/4 cup milk. Beat 2 minutes. Pour into greased/floured pans. Bake 24-26 minutes.

Filling:

In saucepan whisk sugar, cornstarch and salt. Whisk in water, yolk and lemon juice. Boil for 1 minute. Remove, whisk in butter and zest. Cover with wax paper and cool. Spread filling between cake layers.

Frosting:

Mix all ingredients but vanilla, almonds and coconut. Beat 1 minute. Place over simmering water, on high speed beat for 10 minutes. Remove from heat. Beat 7 minutes. Frost cake and sprinkle w/ coconut.
