Shrimp Okra Gumbo

  • 2 cups sliced okra
  • 2 pods garlic
  • 2 lbs. shrimp, clean and devein
  • 1 bay leaf
  • 2 onions, chopped
  • 3 tablespoons oil
  • 1 cup tomatoes
  • 1/2 teaspoon thyme



Step 1

Fry the okra in oil until it stops "roping", add onions, tomatoes an garlic and simmer about 15 minutes. Add 6 to 8 cups water, bay leaf, thyme and bring to a boil. Add seasonings and shrimp and cook on medium heat, about 1 hour. At serving time add a small amount of gumbo file. May be put in each serving dish if desired. Serve over hot, fluffy rice.
