Dessert - Grilled Peaches with Honey and Queso Fresco

  • 1/2 cup honey
  • 1 Tbsp. whilte wine vinegar
  • 1/2 tea. ground ancho chile pepper
  • 1 tea. finely snipped fresh sage
  • 6 ripe peaches
  • 4 oz. Queso Fresco, coarsely crumbed (1 cup)

Preparation

Step 1

In a small saucepan, combine honey, vinegar, ancho chile pepper, and snipped sage. Heat and stir over medium heat just until mixture comes to boiling. Remove from heat; cool slightly.

Cut peaches in half lengthwise; remove pits. Brush cut sides of peaches with the honey mixture.

Prepare charcoal grill. Grill peach halves, cut sides down, on the rack of an uncovered grill directly over medium coals for 6-8 minutes or until lightly browned and warmed through, turning once halfway through grilling.

Place two peach halves on each of six dessert plates. Evenly drizzle the remaining honey mixture on top of peaches; sprinkle with queso fresco.

Serve warm.
