White beans with tomatoes and chiles
These beans make can be a side dish to meats or a hearty meatless main dish when tossed with pasta.

Ingredients
- 1 Tbsp. olive oil
- 2 Tbsp. chopped pickled jalapeno chiles
- 1 1/2 Tbsp. chopped fresh sage or 2 tsp. dried rubbed sage
- 3 garlic cloves, chopped
- 2 15-ounce cans canellini (white kidney beans), drained
- 1 3/4 cups canned crushed tomatoes with added puree
Preparation
Step 1
Heat oil in heavy saucepan over medium heat. Add pickled jalapenos, sage, and garlic. Saute until garlic is tender but not brown, about 5 minutes. Add beans and tomatoes, simmer until mixture thickens and flavors blend, stirring occasionally, about 15 minutes. Season to taste with salt and pepper. Makes 4 servings.
