Hot Artichoke and Roasted Red Pepper Dip

  • 1/3 cup sliced green onion
  • 2 tsp. butter
  • 1 14 oz. can artichoke hearts, drained and chopped
  • 1 cup grated Parmesan cheese
  • 2 Tbs. grated Romano or Parmesan cheese
  • 1 7 oz. jar roasted sweet red peppers, drained and chopped
  • 1 cup mayonnaise
  • 1/8 tsp. black pepper
  • 1 Tbs. snipped fresh parsley
  • Assorted vegetables and crackers



Step 1

In a skillet, cook green onions in butter until tender but not brown. Remove from heat and stir in artichokes, 1 cup Parmesan, red peppers, mayonnaise and pepper. Transfer mixture to an 8 inch quiche dish or 9 inch pie plate, spreading evenly. Sprinkle with parsley and 2 Tbs. Parmesan or Romano cheese. Bake, uncovered, in a 350º oven for 20 minutes or until heated through. Serve with vegetables and crackers.
