Barley Mushroom Soup

A simple and hearty soup, full of good flavors from the good earth.

Ingredients
- 1/3 to 2/3 cup barley
- 8 cups water or stock
- 1 tsp salt (optional)
- 2 tsp oil
- 3 cups chopped mushrooms (about 1/2 lb.)
- 1 leek (or 1 sm onion), chopped
- 1 med. carrot, chopped
- 3 TBS nutritional yeast
- garlic, pepper, soy sauce to taste, 1/2 tsp each marjoram, savory.
- parsley for garnish.
Preparation
Step 1
Wash barley very thoroughly. Bring to a boil in salted water or stock, reduce heat to simmer. Note time. Heat oil in a pan on medium heat. Add mushrooms, stir for a minute more. Stir in nutritional yeast(optional), but very good), remove from heat and let sit, covered. When barley has been simmering about 40 minutes, add vegetables [and garlic & pepper if used] and simmer about 15 minutes more.
