  • 8 slices buttermilk bread
  • 8oz soft unsalted butter
  • 6oz mayonnaise
  • 4 cups of favorite Mac and cheese
  • 2 yellow onions, sliced into 1/4 inch strips
  • 3 Tbs butter
  • 2 cups pulled pork
  • 1 cup favorite BBQ sauce
  • 12 slices sharp cheddar



Step 1

Beat butter and mayonnaise in a mixer until well blended, scraping down the sides of bowl to ensure complete mixing. Set aside.

Prepare your favorite mac and cheese recipe. when finished, spread evenly into sheet pan or casserole dish to a thickness of about 3/4 in. Cover with plastic and cool in fridge. Cut chilled mac into squares slightly smaller than bread.

Melt 3 Tbs butter in heavy bottom pan. Add sliced onions and cook over medium high heat stirring frequently until caramelized. Season with salt and pepper.

heat up BB sauce and add pulled pork. allow to simmer for 5 min over low heat.

Assemble sandwiches:
Butter 1 side of eat piece of bread.

On unbuttered side layer as follows;
-one slice of cheese
-one square of mac and cheese
-one slice of cheese
-1/2 cup of BBQ pork
-1/4 cup onion
-one slice of cheese
Top with bread

cook on hot griddle til golden brown (3-4 min)
