Ingredients

  • 6 eggs

  • 1 c shredded cheddar cheese

  • ½ tsp salt

  • 1/8 tsp cracked black pepper

  • 1 pkg (10 oz) frozen chopped broccoli, thawed and drained

  • 1 small onion, chopped

  • ½ c diced roasted red peppers

  • Cooking spray

Directions

In large bowl, whisk together eggs, cheese, salt, and pepper until blended; stir in broccoli, onion, and roasted red peppers. Coat 10 inch frying pan with cooking spray and heat over medicum heat. Add egg mixture. Cover and cook 8 – 10 minutes until top is set. Slide onto platter.
