Twice Baked Potato Casserole

Ingredients

  • 1 5lb bag red potatoes
  • 1 16-oz carton sour cream
  • 1/4 lb bacon, fried
  • 2 cups sharp cheddar cheese, grated
  • 1/2 pkg Ranch dressing mix
  • 1/2 onion sauted in butter
  • 1/2 cup buttermilk

Preparation

Step 1

Clean and boil potatoes with skin on. Drain off water and mash potatoes and skin. Add remaining ingredients. Salt & pepper to taste. Bake in casserole dish for 40 minutes in a 350 degree oven.
