Shrimp Scampi with Pasta

  • 8 oz angel hair pasta
  • 28 large cooked peeled and deveined frozen shrimp
  • 2 tsp olive oil
  • 1 clove garlic, minced
  • 1/4 cup dry white wine
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 Tbsp fresh lemon juice
  • 1/4 cup fresh parley, chopped



Step 1

Cook pasta, drain and divide among four plates
Meanwhile, thaw shrimp in a large colander under cold running water, about 5 mins
Drain well, pat dry
While pasta cooks, heat oil in a large skillet over medium-high heat
Add garlic, saute for 1 min
Add shrimp, wine, salt, pepper and lemon juice to skillet
Bring to a boil, then reduce heat to medium and cook for 30 seconds
Add parsley, tossing well to coat
Top each plate with pasta with 1/4 of the shrimp mixture
