Ingredients
- 2 1/2 cups shredded turkey
- 1 (14 1/2 oz) can diced tomatoes
- 1 can black beans
- 1 1/2 cup bottled salsa
- 1/4 colby jack cheese
- 3 scallions sliced
- 1/4 cup chopped cilantro
- 1 tsp cumin
- 1/2 Tsp salt
- 1/2 Tsp black pepper
- 8 whole wheat tortillas
- 1 Tsp hot pepper sauce

Preparation
Step 1
1. Spray baking dish with Pam.
2. Mix turkey, 1/2 tomatoes (with juice), beans, 1/2 cup salsa. 1/2 cup cheese, sour cream, scallions, cilantro, cumin, salt and pepper.
3. spoon 2/3 cup of filling into each tortilla, roll and place seam down.
Sauce:
4. stir together remaining tomatoes and juice, salsa and hot peppers together. Spoon over enchiladas.
5. Cover dish with foil and bake 30 min at 375.
6. uncover and top with remaining cheese, back and additional 5-10 min.
7 sprinkle with cilantro and scallions
