Ingredients

  • Frosting:
  • 3 c grated carrots about 1 pound
  • 2 c flour
  • 2 t chinese cinnamon
  • 1 t salt
  • 1 t baking soda
  • 1 t baking powder
  • 4 eggs
  • 2 c sugar
  • 1 c vegetable oil
  • 2 t vanilla
  • 1/2 c nuts and or raisins
  • 3 oz soft cream cheese
  • 1/2 c soft butter
  • 1 t vanilla
  • 3/4 c conf. sugar

Step 1

Grease and flour 2 layer pans or a 13 x 9 x 2 pan.

Grate carrots finely.

Sift dry ingredients together and set aside.

Beat eggs, add sugar, oil, carrots and vanilla. Mix well.

Add flour.
Add nuts and raisins just until blended.


Cool completely before frosting.
