Ingredients

  • DRESSING:
  • 1 whole wheat pita or 1 PC mini Naan round, toasted until crisp and broken into pieces
  • 1 pickling cucumber
  • 8 cherry tomatoes
  • 4 pepperoncini peppers, sliced
  • 1/4 cup chopped sweet peppers
  • 1/4 cup chopped parsley
  • 2 tbsp. chopped fresh mint
  • 1 heart of romaine lettuce, shredded
  • 3 green onions, sliced
  • 2 cloves garlic, minced (or 1/2 clove grated)
  • 1/4 tsp. sumac
  • 1/4 tsp. cumin
  • 1 pinch red pepper flakes or Aleppo pepper
  • 1/2 tsp. dried oregano
  • 2 tbsp. best extra virgin olive oil
  • 1 - 2 tbsp. lemon juice (try 1 tbsp. first, then add more, if necessary)
  • sea salt and freshly ground pepper to taste

Preparation

Step 1

* *Combine* the dressing ingredients and mix well. *Mix* the vegetables and herbs and *top* with the pita croutons. *Pour* the dressing over, *season* to taste with salt and pepper, *mix* well and serve.
