Ingredients
- 2 pkg. frozen crab (200g each) thawed
- 4 large beefsteak tomatoes
- 1/4 cup fat-free mayonnaise
- 2 tbsp. low-fat sour cream
- 1/2 red pepper, diced
- 1/4 cup finely diced celery
- 1/2 tsp. grated lemon zest and 1 tbsp. fresh lemon juice
- pinch salt and pepper
- 2 tbsp. chopped fresh chives
- 1 cup coarsely chopped cooked chickpeas
- 1/4 cup chopped fresh parsley
- 2 tbsp. shredded carrot
Preparation
Step 1
Drain crab. Cut top quarter off tomatoes. Scoop out seeds and pulp. Place cut side down on paper towel. Stir together mayo, sour cream, lemon, salt and pepper. Add ingredients. Divide among tomatoes. Chill.
