Ensenada Crepes

This is a recipe from an old Shadow Rock friend, Bill Piper.

Ingredients

  • For Cheese sauce:
  • 12 thin large tortillas
  • 12 slices ham
  • 1 # Jack Cheese in 1/4" strips
  • 1 large can green chilis in 1/4 strips.
  • For Cheese sauce
  • 1 stick margarine
  • 1/2 cup flour
  • 1 quart milk
  • 3/4 # cheddar cheese, grated
  • 1 tsp prepared mustard
  • 1/2 tsp salt
  • dash pepper
  • Serving for 4
  • Reduce number of tortilla ingredients
  • 1/3 stick margarine
  • 1/4 cup flour
  • 1 1/2 cups milk
  • 1/2 # grated cheese
  • 1/4 tsp salt
  • 1/2 tsp mustard
  • dash pepper

Preparation

Step 1

Preheat oven to 250 degrees.

Place on tortilla: chili strip, 1 piece of cheese and ham. Wrap i[. [;ace om buttered baking dish.

Pour cheese sauce (recipe follows) over crepes. Sprinkle with paprika.

Bake for about 45 minutes

Cheese sauce:

Melt margarine, blend in flour. Add milk gradually, stirring constantly.

Add cheese, mustard, salt, pepper. Cook, continuing to stir until smooth. Pour over paprika topped crepes.
