Sour Dough Loaves

  • 2 tab. sugar
  • 2 teas. salt
  • 2 pkg. quick rise yeast
  • About 7 cups all-purpose flour
  • 1-16 oz. low fat plain yogurt

Preparation

Step 1

In a large bowl, with spoon, mix sugar, salt and east and 6 cups flour. In a 2 quart saucepan over med. heat, heat yogurt and 2/3 cup water until very warm (125 to 130 degree). Stir into dry ingredient mixture until blended and dough forms a ball.

Turn dough onto lightly floured surface, knead until smooth and elastic, about 10 minutes working into more flour, about 1 cup, while kneading. Cut dough into half; cover and let rest 10 minutes.

Grease large cookie sheets.

Shape each piece of dough into 5 inch round loaf. Place loaves on opposites ends of sheets, cover, let rise in warm place until doubled, about 45 minutes.

Preheat oven at 400. Cut 3 parallel slashes in each loaf; brush loaves with water.

Bake 25 to 30 minutes until loaves sound hollow when tapped.
