Italian-Style Tomato Sauce
- 1 tbsp olive oil
- 1/2 cup white or yellow onion, diced
- 2 garlic cloves, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/4 tsp lite salt
- 1 bay leaf
- 3 oz full bodied redwine, such as Burgundy
- 1 (28 oz) can crushed tomatoes, no salt added
In a large saucepan, heat olive oil over med heat.Add onion and garlic, saute until begins to become translucent and soft.
Add basil, oregano, salt and bay leaf. Cook, stirring constantly, for approximately 1 minute.
Add wine , stirring to combine, cook to reduce volume of wine by half
Reduce heat to med-low flame. Add tomatoes; cook, stirring occasionally, for approximately 20-30 minutes.
