Cornish hens with mandarin rice

  • mandarin rice:
  • 4 cornish hens
  • mandarin rice ( see below)
  • cooking oil
  • paprika
  • orange marmalade
  • 1/4 c. slivered almonds
  • 2T. chopped celery
  • 1 small green onion thinley sliced
  • 2 T. butter
  • 1 can (11oz) mandarin orange segments, drained
  • 2T. orange juice concentrate
  • 2 C. coked rice

Cooking time 60mins


Step 1

1) rinse hens and dry

2) saute almonds, celery and onion in butter until almonds lightly toasted.

3) combine almond mix with orange segments, orange juice concentrate and rice tossing to mix

4) stuff hens with rice mix and tie legs

5) brush hens lightly with oil; sprinkle with paprika

6)place hens on cooking grate and grill til juices run clear, about 30- 45 minutes. baste hens with orange marmalade during last 20 minutes.
