CHICKEN****Chicken (or Turkey) Salad with Apple and Blue Cheese-Yogurt Dressing

Ingredients

  • DRESSING:
  • 2 tbsp. Greek Yogurt
  • 1 tbsp. mayo
  • 1/2 tablespoon Extra-Virgin Olive Oil or Hazelnut oil
  • 1/2 tablespoon Lemon Juice
  • 30 grams crumbled Blue Cheese
  • 1 tablespoon chopped Chives (Optional)
  • freshly ground Black Pepper
  • SALAD:
  • 4 ounces diced PC Fire-Roasted Chicken or Turkey Strips
  • 1 Granny Smith Apple (quartered and thinly sliced)
  • 2 tbsp. chopped Dried Apricots or dried cherries or cranberries
  • 2 tbsp. chopped toasted walnuts, pecan sunflower or pumpkin seeds
  • 2 tbsp. thinly sliced Red Onion or scallions
  • 2 celery stalks, sliced thin on the bias
  • Salt & pepper to taste

Preparation

Step 1

* Dressing: In a medium mixing bowl, combine the yogurt, mayo, oil, and lemon juice. Stir until all the ingredients are incorporated. Fold in the blue cheese and chives and season with freshly ground black pepper.

* Cut the chicken or turkey into bite-size pieces and add to the dressing bowl. Add the apple, dried fruit, red onion and celery to the bowl and mix together until combined. Refrigerate until serving time, folding in nuts or seeds just before serving.
