Basic Crepes

  • 1 1/4 cup milk
  • 1 cup all-purpose flour
  • 1 egg
  • 1 teas. cooking oil
  • 1/4 teas. baking powder

Preparation

Step 1

In a blender container combine all ingredients. (For dessert crepes, add 1 teas. vanilla and 1 teas. sugar. For dinner crepes, Add 1/4 teas salt, opt.) If desired, flavor the batter. Cover and lend until smooth.

Heat a very lightly greased 6 -8 inch skillet with flared sides over med.-high heat. Remove from heat. Pour about 2 tab. of batter into the center of the 6-inch skillet or 3 tab. batter into the 8-inch skillet; lift and tilt the skillet to spread batter. Return to heat. Cook about 1 minutes or until lightly brown. Turn with a spatula and cook the second side for 30 seconds.

Invert over paper towels; remove crepe. Repeat with remaining butter, greasing skillet occasionally and stirring batter if needed. Makes about 12- 8 inch or 16-6 inch crepes.
