Chinese Chicken Salad

Ingredients

  • 6-8 oz. Chicken Breast
  • Soy Sauce to cover
  • 4 Tablespoons butter
  • 4 Tablespoons olive oil
  • 3 teaspoons soy sauce
  • 2 tablespoons peanut butter
  • 2 tablespoons vinegar
  • 1 teaspoon mayonnaise
  • 2 heads crisp iceberg lettuce, shredded thin as possible
  • 1/2 to 1 cup each bean sprouts, onion, parsley, snow peas, celery, sesame seeds, carrots, water chestnuts, sliced almonds

Preparation

Step 1

Marinate chicken in soy sauce for 30 minutes. Saute in butter and olive oil about 5 minutes on each side. Remove from pan and slice into thin strips. Keep warm. Chicken can be cut in strips before cooking. Whisk together peanut oil, vinegar, mayonnaise, and 3 teaspoons soy sauce and double if needed. Combine chicken, lettuce and dressing mixture. Toss to coat. Shred or chop vegetables and add to lettuce.
