Ingredients
- 6-8 oz. Chicken Breast
- Soy Sauce to cover
- 4 Tablespoons butter
- 4 Tablespoons olive oil
- 3 teaspoons soy sauce
- 2 tablespoons peanut butter
- 2 tablespoons vinegar
- 1 teaspoon mayonnaise
- 2 heads crisp iceberg lettuce, shredded thin as possible
- 1/2 to 1 cup each bean sprouts, onion, parsley, snow peas, celery, sesame seeds, carrots, water chestnuts, sliced almonds
Preparation
Step 1
Marinate chicken in soy sauce for 30 minutes. Saute in butter and olive oil about 5 minutes on each side. Remove from pan and slice into thin strips. Keep warm. Chicken can be cut in strips before cooking. Whisk together peanut oil, vinegar, mayonnaise, and 3 teaspoons soy sauce and double if needed. Combine chicken, lettuce and dressing mixture. Toss to coat. Shred or chop vegetables and add to lettuce.
