  • 6 T butter
  • 3 T brown sugar,packed
  • 1 1/4 c vanilla wafer crumbs
  • 1/2 c sugar
  • 2 T cornstarch
  • 2 c half and half cream
  • 3 egg yolks
  • 1 1/2 tsp vanilla
  • 8 medium strawberries, hulled and cut in half
  • 1 kiwi, peeled and sliced
  • 1/2 pint blueberries



Step 1

Place butter and brown sugar in9 inch microwaveable pie plate. Microwave on high 1 1/2 minutes or until butter is melted.
Stir in vanilla wafer crumbs. Press mixture evenly and firmly into the bottom and up the sides of the pie plate. Microwave on high for 1 minute. Cool.
Combine sugar and cornstarch in a 1 quart microwaveable bowl. Whisk in ahlf and half and egg yolks. Microwave on high 5 to 6 minutes or until thickened. Stir every 2 minutes. Add vanilla and whisk until smooth.
Pour into crumb lined pie plate. Gently press sheet of plastic wrap directly onto the surface of custard to prevent skin from forming.
Refrigerate 2 hours or until set.
Remove plastic wrap and arrange strawberries, kiwi and blueberries on pie.
