  • 2 tbsp olive oil

  • 3 slices bacon- chopped

  • 2 boneless chicken breasts-chopped into 1"chunks

  • 1 large onion, chopped

  • 2 cloves garlic, minced

  • 1 cup chopped mushrooms- sliced

  • 2 tbsp sherry

  • 2 cups crushed tomatoes

  • 1 tsp dried rosemary

  • ½ tsp black pepper

  • spaghettini for 4 people


Heat a large frying pan to medium and add oil. Add bacon and cooked til lightly browned. Remove from pan and set aside. Add chicken and cook on medium until golden brown- about 4 minutes. Remove from pan and add to bacon. Add onion and garlic to frying pan and cook about 5 minutes. Add mushrooms and cook 2 minutes. Add sherry and increase heat to high, boil 2 minutes. Return heat to low. Place rosemary in a tea ball. Add tomatoes, salt, pepper and tea ball to pan, bring to a simmer for 5 minutes. Add chicken/bacon mixture to tomato sauce. Simmer 5 minutes Cook pasta according to package directions. Drain. Place pasta in large serving dish, pour tomato sauce over pasta and serve.
