Ingredients
- 3 cups cooked rice
- 2 cups cooked chicken, diced
- 1 cup diced pineapple
- 1 cup sliced celery
- 1/2 cup diced green pepper
- 1 1/2 cup grated cheddar cheese
- 1 cup mayonnaise
- 1/4 cup chutney
- 1 teaspoon salt
- 1/4 teaspoon pepper

combine rice, chicken, pineapple, celery, green pepper and 1/2 cup cheese. Stir in mayonnaise, chutney and seasonings. Pour into a butter 2 quart casserole. Sprinkle with remaining cheese. Bake at 350 ° for 30 minutes. An alternate is to add French cut green beans, sliced water chestnuts, pimiento, celery and top with Parmesan cheese.
