Dollar Potatoes

This was a recipe from my friend Hadassah Ziskin. She served at one of her Friday night Seder dinners I was invited to.

Ingredients

  • 4 large potatoes
  • 1/2 cup butter
  • 2 green onions, chopped fine

Preparation

Step 1

Scrub potatoes. Do not peel. Slice 3/16 inch thin but keep in shape by cutting only to about 1/4 inch from bottom of potato. Arrange in rows with slices upright in buttered 5 x 9 loaf pan.

Melt butter. Chop green onions very fine and pour over potatoes.

Bake uncovered at 425 degrees for one hour.

Baste periodically. Reduce heat to 375 degrees. Bake 30 minutes longer until tender. Turn onto platter and serve.
