Ingredients
- 18 eggs
- 2 cups milk
- 2 tsp salt
- 2 tsp sugar
- 1 pound grated Monterey Jack cheese
- 8 ounces cream cheese
- 16 ounces cottage cheese
- 1 cup flour (may use rice flour)
- 2 tsp baking powder
- 1 1/2 cups steamed broccoli
- 2 to 3 small zucchini, quartered lengthwise and sliced thin
- 1/2 to 1 cup chopped onion
- 2 tbsp olive oil
Preparation
Step 1
Beat eggs with milk, salt and sugar.
In separate bowl, mix grated Monterey Jack cheese, cream cheese, cottage cheese, flour and baking powder. Stir egg mixture into cheese mixture.
Saute onions in olive oil.
Spread vegetables in bottom of 11-by-15-by-2 1/2-inch deep pan; pour egg and cheese mixture over veggies.
Bake at 375 F for 40 to 50 minutes or until knife inserted in center comes out clean.
