Thai Shrimp and Sesame Noodles

Ingredients

  • 1 lbs medium shrimp, shelled and deveined
  • 8 oz light Italian salad dressing
  • 2 Tbs chunky peanut butter
  • 1 Tbs soy sauce
  • 1 Tbs honey
  • 1 tsp grated, peeled ginger root
  • 1/2 tsp crushed red pepper
  • 1 pkg (8 oz) package angel hair pasta
  • 2 Tbs salad oil
  • 1 medium carrot, shredded
  • 1 cup chopped green onion
  • 2 Tbs chopped cilantro

Preparation

Step 1

1. In a medium bowl, mix shrimp with 1/3 cup salad dressing. Cover and refrigerate for 1 hour
2. In a small bowl, with wire whisk or fork, mix peanut butter, soy sauce, honey, giner, red pepper and remaining salad dressing. Set aside
3. After shrimp has marinated, prepare pasta as label directs and drain
4. Heat salad oil and sesame oil in a 4 qt sauce pan until very hot. Drain off salad dressing from shrimp. Cook carrot for 1 minute
5. Add shrimp and green onions to carrots and cook for 3 minutes, stirring constantly until shrimp turns opaque throughout
6. In a large bowl toss pasta, peanut butter mixture, shrimp mixtuer and chopped cilantro
