Zucchini Chocolate Cake

Ingredients
- 3/4 c shortening
- 2 c sugar
- 3 eggs, beaten
- 2 1/2 c flour
- 2 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 c cocoa
- 2 tsp vanilla
- 2 c shredded, raw zucchini
- 1/2 c milk
- 1 c nuts (walnuts or pecans)

Preparation
Step 1
Preheat oven to 350.
Cream shortening and sugar.
Add eggs. Sift dry ingredients and cocoa.
Add to creamed mixture and mix well.
Add zucchini, nuts, vanilla, and milk.
Stir well until well blended.
Spread batter into a well greased 9 x 13" pan.
Bake at 350 for 40-50 minutes or until cake tests done.
